Today we are going to learn about another Alcoholic Beverages that is "Whiskey"
What is whiskey????
Whiskey is a spirit produced from fermented grain (Barley ; Corn ; Rye ; Wheat) it is typically aged in Wooden Cask.
The word whiskey come from the Irish Gaelic Using "Breatha" or the Scottish Gaelic using "Baugh" both meaning "water for life"
● Lets get some History about whiskey
• Whiskey played an important role in early history of The United States during the whiskey rebellion of 1974
• The earliest devices for distillation consisted of a closed, heat container, a long tube (known as container) through which the alcohol vapor could cool and turn into liquid
• In Scotland in 1826 Robert Stein invented Continuous distillation in which the alcohol could be distilled continually rather than batch by batch.
• The process was improved by Irish man Aeneas Coffey in 1831and is still use to make most mass produced whiskey today.
Raw Materials??
-> " water, Yeast, Grain "
The water used is often considered the most important factor in making good whiskey. It should be clear, clean, free.
Scottish water is famous for being suited to make fine whiskey.
Manufacturing process of whiskey :
♤ Malting :-
• Grains are shift directly from farms and stored in silos until needed. The grain is inspected and cleaned to remove all the dust and other foriegn materials.
• All grains except barley are first ground into meal in gristmill. The meal is then mixed with water and cooked to break down the cellulose wall that contains starch granule.
• Instead of being cooked barley is malted. The first step in malting consist of soaking in water until it is thoroughly saturated. It us then spread out sprinkled with water for about 3 weeks, at which time is begin to sprout. During germination the enzymes amylase is produced, which converts the starch in barley into sugar.
• The sprouting is halted by drying the barley and heating it with hot air from a kiln.
• For scotch whiskey the fuel used in kiln includes peat, a soft, carbon rich substance formed when plant matter decomposes in water. A peat gives whiskey a characteristic smoky taste. The malted barley is then ground like other grains.
♤Mashing :- cooked grains are mixed with barley and warm water. The amylase in malted barley converts the starch into sugar. Then it is poured into the large vessel known as "Mash tun" and the soluble starch which is converted into liquid is known as "wort"
■ Bourbon Whiskey :- It is produced in the USA.
The mash contain for distillation should be 51 to 79 % maize. And it should be minimum aged for 2 yrs.
■ Canadian Whiskey :- It is a whiskey which is prepared using Rye, Maize, and Barley in which flavouring upto 2% by volume should add (sherry , plum wine ). And it should age for 3 years .
Storage of Whiskey
1. Keep them cool ( fluctuating temperatures cam affect the liquid in the bottle to expand, can damage the cork and stopper )
2. Avoid Sunlight
3. Keep them upright

♤Distillation :- Malt whiskey will distilled twice in copper pot still which will heated until alcohol evaporates.
☆ Alcohol evaporates at = 78.3°C
♤Maturation :- whiskey is now transfer into cask which mellow the raw whiskey
☆ minimum age for maturation is 3 yrs
◇ Scotch whiskey is mature for 3yrs
◇ Irish Whiskey is mature for 5yrs
◇ Canadian whiskey is mature for 3 yrs in oak barel
◇ Bourbon Whiskey is mature for 2 yrs.

♤Blending :- Different batches of whiskey are mixed together to produce better flavor.
♤ Bottling :- The glass bottles are move down a conveyer belt as they are cleaned , filled , capped , sealed , labeled and placed in cardboard boxes.
Scotch whiskey is further divided into 4 different categories and they are :-
1. Single malt
2. Single grain
3. Vatted malt (pure malt)
4. Blended whiskey
1. Single malt :- It is a whiskey which is prepared in single distillery with single grain.
2. Single grain :- It is a whiskey which is prepared in single distillery but it can made using different grains.
3. Vatted /pure malt :- It is a whiskey prepared using same grain but from different distilleries.
4. Blended Whiskey :- It is a whiskey which is prepared using different grains and in different distilleries.
