We saw the history of food and beverages
Today we are going to learn about different beverages.
A Beverage is a liquid intended for human consumption, a basic function to satisfy thirst. Which are divided into Alcoholic and Non-alcoholic.
Some common type of Non-alcoholic beverages are water, milk, coffee, tea, hot chocolate, juices and soft drinks. And Alcoholic beverages such as Beer, wine, spirits, and liquor which contain etanol.
Water and milk have been basic drink throughout the history. As time passed, society developed, techniques discovered various ways to create alcoholic drink from plants that were available in different parts.
Roughly around 6000 year ago there was a say that jesus turned water into wine in georgia and the evidence of wine also found 5000 yrs ago in iran. Beer have been found in Neolithic Europe as far as 3000 BCE and was mainly brewed on domestic scale. Tea was originated in yunnan, China during th shang dynasty (1500 BCE-1046 BCE) as a medical drink.
There are many different ways for producing beverages
1. Purification of water :- water is a primary ingredient in most. Method of purification includes filtration and chlorination. Water should always purified before making any beverage.
2. Pasteurization :- It is a process of heating any liquid for a period of time at specific temperatures then immediately cooling. This process is used to reduce the growth of microorganisms within the liquid. Eg:- Milk
3. Juicing :- crushing of fruit provides simple amount of liquid whereas intense pressing provide maximum amount of liquid. Eg:- Wine (both crushing and pressing take place)
4. Infusion :- It is a process of extracting flavor from plant material by allowing the material to remain suspended within the water. Eg:- Tea, herbal tea, and also sometimes in coffee.
5. Percolation :- The name is derived from a word "percolate" which means to pass a solvent trough a permeable substance especially for extracting a soluble constitute. Eg:- while brewing coffee, water is a solvent and coffe grounds are permeable substance and the soluble constitutes are the chemical compounds that give coffe its color, taste, aroma, stimulating properties.
6. Carbonation :- It is a process of adding carbon dioxide into a liquid. Eg:- water
7. Fermentation:- It is a metabolic process which convert sugar into alcohol.
Eg: wine (The amount of sugar in the wine and time given for fermentation determines the alcohol level amd sweetness of wine)
Beer ( The yeast is added into wort which starts the fermentation process)
8. Distillation :- It is a process of separating mixtures on a base on volatility of component in a boiling liquid.
Eg:- producing spirits(vodka, brandy, tequila, whiskey)
9. Mixing :- An alcoholic mixed drink that contain two or more ingredients are known as cocktail. Eg:- Cocktail ( mixture of spirit, sugar, water, bitter. )
Different types of beverages :-
Non alcoholic:- The non-alcoholic beverages are the one which either contain little or no alcohol. Eg:- no alcohol beer, non-alcoholic wine or apple cider.
1. Water :- water is worlds most consumed drink.
In western cultures water is oftem drunk cold whereas in Chinese culture it is typically drunk hot.
2. Milk :- It is one of the original drink. The most popular international variety of plant milk are soy milk, almond milk, coconut milk and rice milk.
3. Soft drinks :- Carbonated drinks refers to drinks which have carbon dioxide dissolved in it. The first commercially produced carbonated drink was produced by Thomas Henry in 1770. The most consumed carbonated drinks are produced by coca cola, PepsiCo and Dr. Pepper snapple group.
4. Juice :- Fruit juice are natural product that contains either few or no additives.
There are many types of fruit drink :-
i. Fruit juice :- which contains 100% of fruit in the drink.
ii. Fruit Drink :- 10% of fruit is liquified and water is added.
iii. Fruit squash :- 25 % of fruit juice is mixed witj 45 % of sugar or additives.
iv. Fruit cordial :- All suspended matter is produced by filtration or clarification, which appears clear. This is described as flavored.
v. Fruit punch :- It is a mixture of 25% fruit juices and 65% sugar.
vi. Fruit juice concentrate :- Water removed from fruit juice by heating or freezing .
vii. Carbonated fruit drinks :- carbon dioxide added into fruit juice.
viii. Fruit nectar :- It is a mixture of 35 % fruit pulp, sugar and water, which is often consumed as "one shot".
ix. Fruit sherbet :- cooled drink of sweetened diluted fruit juice.
5. Sleep drink :- A night cap is a drink taken shortly before bedtime to induce sleep. Eg. Warm milk.
6. Hot drink :- i. Coffee:- Coffee is a brewed drink prepared from roasted seeds of several species of an evergreen shrub of the genus coffee. The two most common sources of coffe beans are "coffee arabica" and "coffee robusta". Coffee plants are cultivated in more than 70 countries.
ii. Hot Chocolate:- Hot chocolate is also known as drinking chocolate or cocoa.
The first Chocolate drink have been created by the mayans (2500-3000) years ago.
iii. Tea:- Tea is the second most consumed beverage in the world. It is produced from infusing dried leaves of camellia sinensis shrub into boiling water.
Alcoholic drinks :-
The drink which contains ethanol is commonly known as alcohol.
1. Beer
2. Wine
3. Sprits
4. Ciders
5. Liquor
6. Vermouth etc.
